I
left the world of corporate advertising for my love of beer.
A week after completing the "short course" at the
Siebel Institute in Chicago, I came to the Glen Ellyn Brewing
Company. I learned the craft as a brewer's assistant, and
took over as brew master in June of 1999.
The
best part about brewing for the Glen Ellyn Brewing Company is
the variety of beers we offer. In a single year, I brew 25-30
different styles of beer. This is both challenging and rewarding.
The difficulty lies in mastering the disciplines and profiles
of each style, but the results I share with you.
There
are many traditions entrenched in a brewer's historic calendar.
That means that certain beers are brewed at certain times
of the year. Though technology has loosened the parameters
of brewing restrictions, I try to honor many of the world's
best beers and their customary release times.
In
order to accommodate such a variety, I brew in small batches.
This not only keeps me on my toes, it also allows our guests
an endless choice of guaranteed freshness.
